peppered-kale omelettes
a delicious and healthy meal for breakfast, lunch, dinner, or a quick snack
Our peppered-kale omelettes are one of my favorite quick things to toss in the skillet for a delicious and healthy meal or snack, no matter what time of day it is.
ingredients
- 2 large eggs
- 1/4 cup shredded kale
- 1/4 cup diced onions
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon green pepper flakes
- salt and black pepper, to taste
- 1 tablespoon olive oil (for cooking)
cooking instructions
- Wash and shred your kale, then go ahead and dice your onions.
- In a bowl, you should crack your eggs and whisk them until they're well-combined. Season them with the salt and pepper to taste.
- With a non-stick skillet, heat your olive oil over medium heat.
- Add your diced onions and saute' them. Let them cook for 2-3 minutes.
- Add your shredded kale, and let it cook as well for about 2 minutes.
- You can now stir in your red and green pepper flakes into the mix.
- Now, pour your whisked eggs over the sautee'd veggies in the skillet.
- Let it cook for about 3 minutes, or until the edges are browning a bit.
- When ready, gently lift up the edges with a spatula, and allow any uncooked egg to flow to the edges.
- Fold the omelette in half and let it cook for another minute, or to your liking.
- You can now slide the omelette onto a plate, serving it hot.
That's how you make some delicious and healthy peppered-kale omelettes. A nice and simple recipe that can fill you up at any time of the day. It's one I like to reach for quite frequently, especially for a good breakfast to begin the day with. Enjoy!
