taco salad
a delicious, spicy taco salad for when you want a tasty Mexican night
I have always had a soft spot for Mexican food, and one of the dishes I love to make the most is a tasty taco salad. It has a good balance of ingredients and spices, and can be topped off with some tasty salsa and herbs. It's sure to get your mouth watering!
ingredients
- 1 pound free-range ground beef
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1-2 jalapeno peppers, diced (adjust to taste)
- Taco seasoning (to taste)
- 4 cups lettuce (adjust)
- 1 cup salsa (store-bought or homemade)
- Fresh cilantro, chopped (used for garnishing)
- Optional toppings: shredded cheese, tortilla chips, avocado, sour cream
- Salt and pepper to taste
cooking instructions
- Using a large skillet, heat your olive oil over medium heat.
- Add the diced onion and saute' it for 3-4 minutes.
- Stir in your minced garlic, bell peppers, and jalapenos. Cook for another 2-3 minutes until your peppers get a bit tender.
- Add your ground beef into the skillet. Cook it, breaking it apart with a spatula, until it is browned and cooked through.
- You can drain any excess fat if needed.
- Stir in your taco seasoning, salt, and pepper. Mix well, and cook for another few minutes to allow the flavorings to meld together.
- In a serving bowl, place your lettuce in the bottom as a base.
- Begin topping the lettuce with the taco meat and veggie mixture.
- Drizzle some salsa over the top of the taco salad, and garnish it with chopped cilantro to taste.
- Finally, add in any other optional ingredients, such as shredded cheese, sour cream, tortilla chips, or avocado.
- Serve immediately, and enjoy!
