vegetarian chili

a wonderful and hearty chili to warm your belly and feed the whole family

If there is anything my family loved to make when I was growing up, it was a good chili. My appreciation for a good chili has followed me throughout the years, and I have always loved making my own. As I began getting more and more into vegetarian dishes, I decided to adapt my chili to the same framework, and we came up with a delicious vegetarian chili. Hope you like it, too!

  1. In a large pot, heat the olive oil over medium heat.
  2. Add in your diced onion and saute' it for 3-4 minutes.
  3. Stir in your minced garlic and diced bell pepper, cooking for another 2-3 minutes.
  4. Add your diced tomatoes, kidney beans, black beans, and corn to your pot. Stir well to combine.
  5. Now, add in your vegetable broth and chili powder, cumin, smoked paprika, salt, and pepper. Make sure you stir well to incorporate all of the ingredients.
  6. Bring your chili to a boil, and then reduce the heat down to low. Cover it, and let it simmer for 20-30 minutes, stirring it occasionally. This will help your flavors meld together well.
  7. After simmering, you can taste your chili and adjust seasoning if you need to. For example, you can add more chili powder or salt or pepper to your preference.
  8. Finally, add in any optional herbs if you'd like, such as the chopped cilantro, parsley, or thyme.
  9. Ladle your chili into bowls and serve warm.
